Our Dough

Organic High Protein Flour paired with Wagyu Beef Tallow.

We only use organic flour, milled to a minimum of 11.5% gluten-developing protein.

We pair Flour with Wagyu tallow, which is better than seed oils in dough due to its higher smoke point, adding rich umami flavor, and being more natural and unprocessed. Seed oils, in contrast, often lack flavor and undergo heavy refining, making tallow a superior choice for quality and taste.

Wagyu Beef

Ghee

Ghee has a high smoke point, making it ideal for cooking without producing harmful compounds. It's rich in healthy fats, vitamins A, D, E, and K, and free from trans fats. Unlike seed oils, ghee is more stable, less processed, and contains no additives or preservatives.
